Merle is a French restaurant in Yokoshibahikari-machi, Chiba Prefecture, dedicated to exploring the marriage of French cuisine with organic local Japanese produce. Located only an hour from central Tokyo, or thirty minutes from Narita airport along the Kuriyama River, Merle offers the tranquility of dining in a traditional Japanese countryside village.
Marrying fresh local ingredients with traditional French cooking, starting with a base of house made soup stocks that serve as the base of our classical French sauces married with traditional Japanese flavors. Chef’s courses are available by advanced reservation, with the course changing throughout the year to focus on each season’s freshest ingredients. Merle works closely with locally renowned farm Seizaemon, located nearby, to source high quality rice and organic vegetables. In winter months, we serve a special menu feature locally sourced wild game.
